Pepsi Sauteed Salmon Recipe

Every time we go to Sam’s Club or Costco and they have samples my kids try EVERYTHING!  I love it!   They had a Coca Cola Salmon there and the kids have been begging me to make it!  It was super easy to make and EVERYONE LOVED it!!

Ingredients:

1.5 cups Pepsi or Coke (The original recipe called for Coca-Cola, but we only had Pepsi in the house)
1.5 tbs. vinegar
3 salmon fillets
1 tbsp. olive oil

-Combine the Pepsi, vinegar and 1/8 tsp. of salt in a saucepan over medium-high heat and reduce to 1/2 cup. (This took about 30 minutes. I just stirred it occasionally while making the rest of the meal.)

-Heat 1 tsp. olive oil in a large non-stick skillet over medium heat.  Add Veggies and stir fry about 7 minutes.  Add 1/2 tbsp. of water and a pinch of salt.  Stir fry until all vegetables are tender.  Remove from heat.

-Season salmon fillets with salt and pepper (I used my Wild Tree Rancher Steak Rub).  Heat remaining olive oil in a non-stick skillet over medium heat.  Place the fillets, flesh-side down into the pan.  Saute until first side is golden brown, about 5 to 7 minutes.  Flip over to skin side.  Saute until fish is opaque, but still tender, about 5 additional minutes.  Remove from heat and hold warm.

-Place the pan with vegetables over medium-high heat and toss ot reheat briefly.

-Serve fillets and mixed vegetabls drizzled with glaze.
